A love of fire

In addition to the option of hiring Gloucester Studio for private parties, there are dates throughout the year where you can come along and cook over fire at one of our Pyromaniac Cookery School classes or attend one of our special events.

The Pyromaniac Cookery School  is rather different to many UK cookery schools and was inspired by chef Kathryn’s travels through Southeast Asia where cookery school students enjoyed a leisurely pace and an informal approach to learning. While there is plenty of hands on activity and the requisite cookery book to take home, students also take time to sip a glass or two of wine and gaze into the fire as they share a meal. All dishes taught can be recreated at home on a basic fire pit or barbecue with minimal equipment.

Special events at Gloucester Studio provide an opportunity to buy single meals at the restaurant (Gloucester Studio generally works on an exclusive hire basis). Special events promote the launch of new menu’s, raise money for charity or celebrate milestones.

Friday 23rd February: Full Pyromaniac Menu Launch Party (£75/£100)

In 2017 I launched a new ten course menu at Gloucester Studio. The launch was for carefully selected members of the press and they loved it (see the reviews). For 2018 I have a meal I’m even more excited about as I cook over multiple fires and go Full Pyromania. The meal will cost £1,200 for up to eight people but for the launch party, tickets are £100 per head or £75 if you get in early and snap up yours at the early bird price.

Tickets include:

  • A five course meal cooked over five different fires (I can cater to all dietary requirements).
  • A cocktail on arrival then wine matched to each course (or non-alcoholic alternative).
  • A goody bag to take home with you.

Saturday 10th March: Beginners Fire Cooking (£115) 10am to 4pm

Students relax with a hot drink as they try their hand at cooking the Danish treat aebleskiver. Over the course of the day they cook the meal from prepared ingredients; creating a bespoke filling for the provided bread dough to make griddled calzone, cooking chicken (or celeriac) in dough over fire to eat with potjie potatoes and smoked salad, and baking orange and Cointreau cakes to enjoy with flambeed sauce.

Course includes:

  • A mix of hands on cooking experience and demonstration
  • A relaxed three course lunch with wine
  • A cookery book to take home with you detailing the recipes prepared

Sunday 11th March: Advanced Fire Cooking (£150) 10am to 5pm

Over the course of the day students will create a three course meal from scratch; fire-cooking a lamb or aubergine filling for a yogurt and turmeric griddled pie, creating a bespoke rub for a piece of smoked beef, halloumi or tofu, making smoked hasselback potatoes, fire-cooking vegetables and baking a self-saucing chocolate pudding. All courses will be enjoyed around the fire pit with wine (optional but highly recommended) but this is a faster paced event than the beginners course with far more preparation of ingredients.

  • A relaxed three course lunch with wine

Saturday 14th July: No More Boring Barbecues for Beginners (£115) 10am to 4pm

Few things are more optimistic than a barbecue but while the event in our imaginations is warm and social, the reality can often be disappointing. Not so at Gloucester Studio and in six hours students will bake Camembert (studded with smoked garlic) in coals, make amazing burgers with fire-cooked salsa served in a smoked bread bun and customise and cook pan cookies. All courses will be enjoyed fireside with a glass or two of wine.

Sunday 15th July: No More Boring Barbecues Advanced Techniques (£150) 10am to 5pm

Even if you have hosting a barbecue down to a fine art, making the same dishes over the years can leave you hungry for inspiration. What about a dish that wowed Michel Roux Jr? Yes, this is the course with the bonfire steak! As well as cooking a rib of beef in a bonfire to serve in flat breads with 18 hour gravy, students will be cooking scotch eggs before baking a ginger cake to serve with apples in a caramel sauce. All courses will be enjoyed fireside with a glass or two of wine.
