Mother’s Day Cookie Recipes

If you’ve left it until now to plan Mother’s Day then I am here to save the day with two simple and delicious biscuit recipes you can make with the kids. This recipe comes from The Pyromaniac Chef Cook Book (£12) and is one of 70 fully photographed recipes to inspire you to get outside, light a fire and get cooking.

Cardamom Pan Cookies

These are somewhere between a pancake and a biscuit. They are delicate and floral, proof indeed that you can be a pyromaniac and enjoy ladylike activities like drinking tea on the lawn. Makes 8 cookies.

100g plain flour

40g golden caster sugar

3 cardamom pods

50g butter

1 egg

  1. Remove the seeds from the cardamom pods and crush them.
  2. Mix the cardamom, flour and sugar then rub in the butter until the mixture resembles breadcrumbs.
  3. Add the egg and use a blunt knife or your hands to bring the mixture together.
  4. Break off small pieces and flatten into discs. Fry in a dry pan over a fire.

Cook conventionally: As above but use a hob.

Chocolate Orange Pan Cookies

If I was making these just for myself I’d leave out the chocolate chips but everyone I know thinks chocolate chips improve such things. Makes 8 cookies.

100g plain flour

40g golden caster sugar

1 orange

50g butter

1 egg

30g chocolate chips

  1. Zest the orange. Save the rest of the orange for another time.
  2. Mix the zest, flour and sugar then rub in the butter until the mixture resembles breadcrumbs.
  3. Add the egg and use a blunt knife or your hands to bring the mixture together. Mix in the chocolate chips.
  4. Break off small pieces and flatten into discs. Fry in a dry pan over a fire.

Cook conventionally: As above but use a hob.
