Fire Cooked Meal on 2nd November: £100 per person

An open-ticketed event to celebrate my most ambitious pudding to date; Baked Alaska cooked in my smoker.

Combine a cosy fire-cooked meal with learning a new skill. Jane Gray-Wallis is bringing her creativity and bag of tools to Gloucester Studio to run a practical workshop where each participant begins with a rough piece of wood and leaves with a spoon. Kathryn will ensure you are well fuelled with a hearty lunch and will provide a cake for the break. Tea, coffee and soft drinks will be available throughout the afternoon.

The event is suitable for absolute beginners and will also be an enjoyable afternoon for anyone who already enjoys working with wood.

The Pyromaniac School  of Cookery is rather different to many UK cookery schools and was inspired by chef Kathryn’s travels through Southeast Asia where cookery school students enjoyed a leisurely pace and an informal approach to learning. While there is plenty of hands on activity and the requisite cookery book to take home, students also take time to sip a glass or two of wine and gaze into the fire as they share a meal. All dishes taught can be recreated at home on a basic fire pit or barbecue with minimal equipment. All classes can cater for a wide range of dietary requirements. Please notify at time of booking.

Beginners Fire Cooking (£115 per person)

Students relax with a hot drink as they try their hand at cooking the Danish treat aebleskiver. Over the course of the day they cook the meal from prepared ingredients; creating a bespoke filling for the provided bread dough to make griddled calzone, cooking chicken (or celeriac) in dough over fire to eat with potjie potatoes and smoked salad, and baking chocolate orange cakes to enjoy with flambeed sauce.

Course includes:

  • A mix of hands on cooking experience and demonstration
  • A relaxed three course lunch with a glass of wine
  • A cookery book to take home with you detailing the recipes prepared

Advanced Fire Cooking (£150 per person)

Over the course of the day students will create a three course meal from scratch; fire-cooking a lamb or aubergine filling for a yogurt and turmeric griddled pie, creating a bespoke rub for a piece of smoked beef, halloumi or tofu, making smoked hasselback potatoes, smoking a salad and baking a self-saucing chocolate pudding. All courses will be enjoyed around the fire pit with wine (optional but highly recommended) but this is a faster paced event than the beginners course with far more preparation of ingredients.
